One thing most of us would love is a lie in! We get to spend so little time actually tucked up asleep that I know if I was given the chance to stay in bed a little longer and just, well, do nothing I would jump at the chance.
Breakfast in bed is something that is generally reserved for special occasions so with Mothers Day coming up I thought it would be the perfect chance to showcase something special – something other than cereal and tea.
I am going to show you how to create your own special cookies and I will be cooking up a batch to add to the contents of one of the fabulous Italian hampers from Vorrei for a delicious Mothers Day breakfast treat!
Vorrei is a store that specialises in authentic Italian foods, a lot of which are sourced direct from small companies and farms across Italy to keep the quality. I had never tried Almond spread until now and after having it on toast I can imagine it would be amazing as a filling for cupcakes or as the butter in ‘bread and butter pudding’.
Flooded Cookies
12oz Plain Flour
2tsp Baking Powder
4oz Caster Sugar
8oz Butter
1 Egg
1tsp Vanilla Extract
Icing sugar
Colouring of choice
Shaped Cookie Cutters or Circle/Square Cutters.
Cream together the sugar and butter. Add the egg and vanilla essence and continue to mix.
Gradually add the baking powder and sieved flour and mix until a firm ball is formed. You may need to take it out of an electric mixer to finish this step.
Roll it out onto a floured surface and using cookie cutters, cut your desired shapes.
Lay on baking trays and bake in the oven at 170 degrees c for approx 15 minutes.
Leave on the baking tray to cool slightly before moving to cooling racks.
Once cooled completely make up your icing to a hard peak consistency and pipe a border around the edges of each cookie.
Using the left over icing divide into dishes and colour as you wish. Gradually add a few drops of water at a time until you end up with a thick syrup like liquid.
Decant this into a squeezy bottle ( i bought mine in a kitchen shop and it was labelled as a ketchup bottle) and fill in each of the sections, this is called ‘flooding’.
Push it gently if necessary towards the edge so it fills all of the gap. Leave to harden and serve. They will keep in an airtight container for up to 7 days.
The delicious contents of the Vorrei hampers are much sought after Italian delicacies including Almond spread and marmalades, chocolate filled biscuits and the finest Prosecco.
Being able to indulge in authentic Italian biscuits while sitting in bed catching up on reading would be the best start to Mothers Day ever! Sipping on prosecco for breakfast is something that should be encouraged for at least one day a year – I say let it be Mothers Day!
