Slimming World has been a part of my life for the last 2 years, I first joined at the beginning of last year and was 14st 6lb – the heaviest I have ever been and considering I am only 5ft 1in it showed everywhere! I fooled myself into thinking I was OK with it when inside I was obsessed with my wobbly bits and clothing size!
I did what many do and dropped going to class after a few weeks and joined again last September and was 13st 6lb. 1 stone gone but also a lot of home life upheaval too so not necessarily all down to healthy eating and exercise either! Weigh in at the beginning of the year saw a 4lb gain from over Christmas and New Year then last week I maintained. This week I have stuck to it religiously and have only lost half a pound!
HALF A BLOODY POUND!
I am seriously ramping it up this week.
Last week Helen gave us a fabulous talk about taking it back to basics so I sat and wrote down what we are going to have for the next week and added the ingredients to my basket as I went so I know that only the bits I need are being delivered. All too often I chuck things in that are not needed or something that ‘looks nice’ but this way it was purely the ingredients for the set meals.
For breakfast I always have my 2 Slimming World bars as my healthy B (Its just easier for me on the go to grab 2 bars than do breakfast!), lunch will be a combo of the Slimming World soups, salads with cooked meat or the likes of prawn wraps etc (made with the Weight Watchers wraps) I will be sharing some of the meals I make starting with a couple from last week like the fabulous Nando Fakeaway!
1: Preheat oven to 190 degrees c and line a large baking tin with baking paper. Mix together the peri-peri sauce, tomato puree, lemon juice and garlic. Rub the mixture all over the chicken legs, season and place in the prepared tin. Roast for 10 minutes.
2. Remove the tin from the oven and spread the chips around the chicken. Season the chips, spray with Frylight and cook for a further 40 minutes, turning the chips halfway.
3. Meanwhile, mix together all the coleslaw ingredients. Divide the chicken, chips and slaw between 4 plates to serve.

Absolutely delicious and so like Nando’s without the grease that we will most definitely be having this again. It also helps that the Nando sauces are on offer for £1 in Tesco at the minute so i stocked up on a few different strengths – I will work my way up to the medium! lol
