Tapas! Be still my heart!
Omar Allibhoy is the mastermind behind Tapas Revolution, Newcastle is the newest tapas bar launches today, the 13th of February. Food, like life, is best shared with friends and loved ones, and tapas are the embodiment of sharing. Hailing from Madrid, Omar lives for delicious homemade food and you can tell he is passionate about cooking authentic tapas for others. He kindly spent time explaining to us how the Spanish way of life is and how important spending time with family and friends is.
I was invited along to cook some of the dishes and try the Spanish cocktails during the pre launch of what will be the sixth Tapas Revolution in the UK. Having worked with Marco Pierre White, trained by the legendary Ferran Adria at El Bulli and been dubbed the ‘Antonio Banderas of cooking’ by Gordon Ramsey, Omar certainly knows his way around a kitchen!
Sipping on one of the legendary Spanish Gins ( GINABELLE – plum gin infused with red berry tea and served with Fever-Tree Indian tonic and
forest fruits) I realised just how different the UK attitude to drinks is, presented in authentic balloon glasses with fresh fruits this seemed so much more special than the usual tall glass, this applied to all of the cocktails – the attention to detail was second to none!
Omar showed us into the immaculate kitchen and explained to us how to cook the tapas using authentic Spanish ingredients, Sepia a la plancha (cuttlefish cooked on the griddle with garlic, parsley and extra virgin olive oil), Gambas al ajilo (tiger prawns with garlic and chilli oil cooked in a terracota dish), Chorizo a la parilla (grilled smoked sausage with cider reduction) and Pan con tomate (toasted bread, garlic, tomato and olive oil) – oh my word, such simple dishes but such powerful flavours! This is the whole ethos behind Tapas Revolution and this make it a welcome addition to the Grey Quarter of Eldon Square.
With everything from meat and seafood to a number of vegetable dishes there is something for everyone. There is a set lunch menu of £9.95 (which runs from Monday to Friday 12-6pm), paellas for 2 people to share, set menus for 2 or more to share, all the way through to the individual dishes and Lomo Alto (rib eye steak) for £33 – catering for any budget!
