Cream together the butter and sugars. Add the eggs one at a time and mix well between each addition.
Gradually add the flour
and the coffee to the mix and make sure it is well incorporated.
Using a small food processor or nut chopper, chop the coated coffee beans until they resemble rubble…
leave some larger pieces for that kick.
Fold these carefully into the mixture.
Using an ice cream scoop, place small rounds onto greased baking trays, spacing well apart.
Bake in a preheated oven at 180* c for approx 12-15minutes.
They will rise slightly while cooking. After approx 10 minutes check to see if they are spreading.
Gently press the mixture down with the back of a cold dessert spoon – bake for another 5 or so minutes. This makes them more chewy in the middle!
