Have you been forecast snow? Brrrr! I know I am not alone in wishing we were in a sunnier setting and with that in mind I have cranked up the heating, popped on some Flamenco music and pulled out these rich creamy potatoes from the sun soaked island of Cyprus!

We have been set a challenge by TOTS100 and Tesco to create an original recipe using their new Cypriot potatoes which are ideal for boiling, steaming, roasting or even baking and available in either 750g packs or loose from Tesco stores nationwide until the end of March.
The creamy taste of the yellow flesh means that the potatoes don’t even need to be peeled, prep work is easy and a quick wash is all that is needed.

Whenever I have made potato salad in the past it has been with a lot of potatoes, eggs, spring onion and mayonnaise (emphasis on the mayonnaise!) but this time I wanted to try something a little lighter for those days when you want a refreshing healthy lunch or accompaniment to a main meal.
To make this fresh and peppery salad I used a mandolin to slice all of the potatoes, spring onions, radishes and sweet red peppers so that they were all the same thickness.
The potatoes were popped into boiling water and boiled for approx 7 minutes until just softened but still firm enough to hold their shape.

Once cooled slightly they were then tossed with the rest of the ingredients and spritzed with oil and balsamic vinegar. Topped with a sprinkling of black sesame seeds and course sea salt this salad really is light and peppery, with a sweet kick from the balsamic and peppers and quite filling too!
Ideal as a side dish to baked chicken or simply on its own as a light lunch!
