Week 26 brings us chicken again but this time it is in the form of a salad, nothing nicer on these warm days than something refreshing and crisp!
Ingredients:
2 Boneless Chicken Breasts
2 tbsp Cayenne Pepper hot sauce (or similar)
2 tsp Olive Oil
2 Cos Hearts
4 Celery Sticks
2 Carrots
2 Spring Onions
Blue cheese sauce:
2 tbsp mayonnaise
70ml semi skimmed buttermilk
70ml skimmed plain yogurt
1 tbsp white vinegar
1/2 tsp sugar
35g blue cheese (crumbly)
salt and pepper to taste
