The cake is a basic vanilla sponge with a little lime rind added before baking and a drop of lime juice poured over while still hot. The topping is half butter cream, half cream cheese and the juice and rind of 1 lime.
The topping is quite soft and easy to pipe but does harden up after an hour or so so leave out to harden before packing away in cake tins 🙂
