When it comes to the art of wine and craftsmanship at Talon Winery, they never seem to disappoint. It is their mission to become Colorado’s Premier Winery, and I must say- I very much believe it. I don’t consider myself a wine connoisseur, but wow- do the wines from Talon make me want to become one. One sip of their renowned Lavender Wine and I instantly understand why this one in particular is among their best-selling.
Let me guide you through the details of this sensory experience:
Appearance
As Talon takes immense passion in the presentation of their products, the look of this bottle is instantly inviting. With the florally decorated capsule and the beautiful art of lavender showcasing the goodness the bottle has to offer- it’s an instant catch.
As for the wine itself, it cascades as an alluring downfall from the bottle and stands clear and inviting in the glass.
Aroma
If I was excited by appearance alone, I wasn’t ready for what my sense of smell would tell me about the product, as aroma is where it stands out the most.
Delicate floral notes dominated the aroma, with prominent hints of lavender alongside subtle citrus undertones, lemongrass. The lavender essence is gentle yet distinct, adding a unique aromatic dimension. Just enough to satisfy, and simultaneously leaving you wanting more.
Palate
Instantly crisp and refreshing on the palate, with a medium sweetness- just right. The lavender infusion provides a nuanced herbal character that intertwines seamlessly with the wine’s natural acidity. There are additional flavors of lemon zest and citrus, complemented by a touch of minerality.
Finish
My journey through the senses during this wine tasting kept topping the previous venture, and crescendoed into a marvelous finale with the finish.
The finish is clean just as one would expect from the presentation- and lingering. With a pleasant herbal aftertaste that evokes a serene garden filled with lavender blooms, it left me content as well as already yearning for my next sip.
Overall
This lavender-infused white wine offers nothing short of a delightful sensory experience, marrying the floral elegance of lavender with the bright acidity of a well-crafted white wine.
It’s perfect for those who appreciate unique flavor profiles and enjoy wines that venture beyond traditional boundaries. If you’re feeling adventurous, this venture will truly not disappoint.
Pairing
Indulging in the delicate pleasures of this lavender-infused white wine unveils a world of sophisticated pairings that enhance the palate and set the senses aflame in the best way possible.
Let’s get right into the best possible recommendations to embark on a journey where every sip and bite invites exploration, celebrating the art of pairing wine with food in its most exquisite form.
Hard, Salty Cheeses
Pairing lavender-infused white wine with a selection of hard, salty cheeses creates a delightful contrast of flavors and textures. The gentle floral notes of lavender complement the robustness of aged cheeses like Parmesan or aged Gouda, enhancing their nutty and savory undertones. The wine’s herbal nuances add a layer of complexity, balancing the saltiness with a touch of sweetness. Think of the scene from Ratatouille!
Fresh Fruits
Fresh fruits, such as crisp apples or juicy berries, further elevate this pairing by providing a refreshing collaboration. The wine’s floral aromas and fruity hints harmonize beautifully with the natural sweetness of the fruits, creating a refreshing and balanced tasting experience. The acidity in the wine cuts through the richness of the fruit, cleansing the palate and preparing it for the next delightful bite.
Lemony Dishes
For dishes featuring lemony flavors, such as grilled lemon chicken, lemon-infused fish, or lemon risotto, the lavender-infused white wine acts as a sophisticated accompaniment. Its floral and citrusy notes complement the bright zestiness of lemon, enhancing the dish’s overall complexity. The wine’s herbal character echoes the fresh herbs often found in lemony dishes, creating a cohesive and pleasing combination on the palate.
For a lemon-infused seafood enthusiast like myself, this combination sounds like that of a dream.
Rosemary Dishes
Pairing this wine with rosemary-infused dishes, such as roasted lamb with rosemary potatoes or a hearty rosemary focaccia, creates a symphony of herbal flavors.
The wine’s lavender undertones meld with the robust aroma of rosemary, enhancing each other’s herbal profiles. The combination is savory and aromatic, with the wine’s floral notes adding a delicate touch that complements the dish’s earthy richness.
Talon Winery and Lavender
Talon Winery has proven that Lavender, with its ethereal purple hues and hypnotizing aroma, is not just a herb for sachets and essential oils but also an intriguing ingredient for winemaking. The entirety of Western Colorado has been raving about their Lavender Wine, and I can very much see why.
When we take a step back to look at the process of creating such a masterpiece, we come to appreciate the final product more and relish in the pleasures it offers to the senses. Lavender fields, in all their glory, remind some of certain parts of the Mediterranean, and others of the delightful smell associated with its beautiful purple embrace.
The process of infusing carefully selected flowers into wine begins with harvesting them at peak bloom to capture their fullest aroma and flavor. These flowers are then steeped or infused into a base wine, often white or rosé, during fermentation or aging.
Of course, winemakers at Talon must put precise care into the infusion to reach the most desirable outcome. The infusion of lavender into wine requires a delicate balance, as too much can overpower the wine’s natural flavors, while too little may fail to impart the distinctive floral essence.
Once the infusion is complete, the wine then undergoes clarification and aging, allowing the flavors to harmonize and develop complexity. The result is a spectacular wine that not only reflects the essence of lavender but also maintains the integrity of the base wine varietal.
