Tis the season of warm soup and cosy cuddles! I have already uploaded a couple of my favourite recipes and thought I should continue through Autumn with some comfort foods.
This is a super easy chicken and sweetcorn soup that takes less than 30 mins inc prep time. Easy to freeze and should feed around 8.

Heat the oil in a heavy based pan and brown the bacon. Add the stock, corn and shredded chicken and mix well.
Bring to the boil. Add the noodles/pasta then simmer for 15 minutes. Season with salt and pepper to taste.
Told you it was simple.
Now imagine how many more soups you could conjure up from a few simple ingredients in your fridge and cupboards.
