I’m going to hand over to Kacy/Karen Chubb now as copy n paste the info she sent over for this weeks recipe. I have included the photographs from my baking session and skipped the sultanas as the boys aren’t keen.
Carrot and courgettes muffins
300g sugar
310g sunflower oil
4 whole eggs
275g plain flour
1 tsp baking powder
1/2 tsp bicarb soda
1/2 tsp mixed spice
salt
250g grated courgette
250g grated carrot
50g sultanasMix the dry ingredients together
Mix the sunflower oil and eggs together in a separate bowl
Beat the flour mix with the egg mix
then add the carrots, courgettes and sultanas
Bake in muffin tins at 200 for 15 minutes
until they start to crack
Then turn down to 180 and cook for 5 mins until golden brown
