Baileys is one of my favourite drinks, it wouldn’t be Christmas if we didn’t have a bottle lingering somewhere. The thing is it usually sits there for the rest of the year. I thought about combining it with the other love in my life – cake! Week 15 is a no bake Baileys Cheesecake that is a fabulous boozy treat for any dinner party.
8oz digestive biscuits, crushed
4oz butter, melted
10oz Philadelphia cream cheese
9fl oz double cream
4oz caster sugar
5tbsp Baileys Irish Cream
1 punnet of either raspberries/blueberries/strawberries etc to decorate
Chocolate swirls/curls to decorate
Icing sugar to decorate
Place the butter and crushed biscuits into a pan and heat through until all the butter is soaked into the biscuit mix. Press into a greased 9 inch cake tin and chill before filling.Into a mixer place the cream cheese, double cream and sugar and whisk until almost stiff. Add Baileys and whisk until firm.Spoon onto the chilled base and decorate as you wish. (we used all the fresh fruit on the first one but this one is equally as delicious with that hint of fruit in the form of compote and chocolate chips!)
