Its been a while since I have shared a recipe here, to be honest its been a while since I have created anything other than what the kids ask for dinner! I guess I have been in a bit of a rut, not wanting to make things the girls won’t eat or even try. Im sure every parent feels the same at times!

Anyways! I decided to start and make more meals that can also be frozen. I can take one portion out for me and freeze the rest in either bags or tubs of one person size dishes. This way when the girls want beige food I can whip something that has a little more taste out of the freezer for me!

What you will need to make 4 portions:

Add a little oil to the pan and add the garlic, celery, onions and pepper. Heat until soft.
Add the chicken and chorizo and heat through.
Add all of the seasonings and noodles then stir well.
Add the stock and bring to the boil. Reduce heat and simmer for 10 mins or until the noodles are soft.

Such a super simple meal but quite filling with a bit of a kick! What is your favourite winter soup to have when the weather takes a turn for the worse? I think this is definitely going to become a staple for me.
