Did you know coconut milk is great for building up the bodies immune defenses to prevent sickness and disease. At the moment this house has a huge red cross painted on the door to ward off anyone thinking of coming close. Laryngitis, Covid, summer flu bugs… you name it we have it! When I say me I mean everyone else and I’m playing nurse!
I was given the book Moon Milk well over 2 years ago and I haven’t gotten round to creating anything from it yet. I was flicking through and came across a recipe for Coconut Cream Pie. A thick and creamy, dessert-like Moon Milk drink.
Coconut Milk is pretty much the only one I can drink without some kind of stomach reaction. Since having my gall bladder out I seem to have so many issues with food and drink. I really need to sit and work out exactly what I should and should not be consuming! Reading that coconut milk helps combat anxiety, stress and muscle tension, as well as aiding relaxation to help sleep patterns confirmed we simply had to try this night time drink.
All you need is:
Simply add all of the ingredients (minus the toasted coconut milk) to a pan and warm gently. Do not boil.
Simple. I am now on the hunt for some Pink Pitaya Pea Flower Powder to create a dreamy looking pale pink moon milk!
