When my 6 year old tasted the carrot cake and announced ‘ Ive found love!!’ i realised this one was a winner! (especially since he doesn’t like nuts!) I am collating all 52 recipes into one folder for ease of use – check them out.
Lots of pics for a very simple cake, lets start off easy.
Cake….Preheat oven to 180 degrees c
Gather all your ingredients and add them ALL straight into a mixing bowl..(unless you really like washing up theres no need to pop them in separate dishes like I did – that was just for pic purposes!)
Either hand mix or using a mixer on SLOW speed combine all the ingredients until the mix is smooth.
Grease your 8in tin – i use the 1cal spray oil. Its so much easier and works really well, doesn’t taint the taste of the food and is so much easier than wiping the tin out with butter or lining with grease-proof paper.
Add the mix and level off the top. Bake in the preheated oven for 50/60 minutes or until a cake skewer comes out clean.
I made 3 lots of this mix seperately and it makes either 1 inch cake, 8 mini loaves (bake for 30mins) or 12 muffins (bake for 25/30mins).
Like you did for the main cake, gather together all of your frosting ingredients and add to a food processor or bowl and mix together until smooth and creamy.
Apply to your cakes and finish with decoration of your choice. Chill slightly before eating to harden up the frosting. (there’s no pretty way to decorate the loaves but i think the cupcakes look fab and they wont last 5 minutes anyway – this is going to be a regular make in this house!)
Instead of adding the frosting to the top of my large cake i split it in half and sandwiched it together, dusting with icing sugar to finish 🙂
