As the weather gets warmer we are spending more and more time eating al fresco and there is nothing simpler than a big bowl of salad to tuck into alongside a good BBQ or pulled pork buns outside!
I have mentioned before about how we love to have big bowls of food in the middle of the table and for everyone just to grab a plate and tuck in. There is a huge sense of family togetherness and it is exactly like those old American movies with all of the family around the table tucking in – arms everywhere and people grabbing whatever they wish. The kids love it this way too as they don’t have to have food on their plates that they might now want!
Salad is a staple with every meal as I love the freshness of the icy cold ingredients alongside the heat of cooked meat or corn on the cob but sometimes I get a little bored with a generic iceberg lettuce. This broccoli salad has just the right amount of bite to it to add something special to a meal and it is way more filling than lettuce leaves too!
Add whatever ingredients you wish, I have been known to throw in dried cranberries too – the sweet against the ranch dressing is perfection!
Ingredients:
2 heads of broccoli
20 cherry tomatoes
1 bag croutons
1 large avocado
1 cucumber
2 sweet orange peppers
Ranch dressing
Method:
Chop all of the florets of broccoli and veg to bite size pieces.
Place in a large bowl and add a good covering of ranch dressing
Toss to combine all the ingredients.
Serve and enjoy!
