Before I was diagnosed with having gall bladder issues we thought the problems I was experiencing were possibly down to a dairy allergy. This of course meant cutting out milk, cheese etc and finding suitable alternatives. I tried soya and it was a little too earthy for me and some of the nut ones, almond and hazelnut had too much of a nut taste (yeah believe it or not lol) to pass as milk for me, especially in coffee and tea!

However I have always loved coconut and even the smell of it is comforting to me, yes i was a child of the 80’s who would douse herself in coconut smelling scents and use both the shampoo and conditioner to full extent to absolutely reek of the tropics!
We are already huge fans of the Vita Coco coconut water and Compressed Oil for cooking so it seemed like a natural leap to switch to the Vita Coco Milk Alternative which is made from coconut cream and Vita Coco Coconut Water, it is naturally sweet and packed with electrolytes. Deliciously smooth and ideal for breakfast over cereal or as the base for smoothies.
I have found it is an ideal substitute for milk in our ice creams though and what better way to start the day than with a healthy dose of banana and peanut butter ice cream on waffles. The combination of fruit, milk and nuts will give you the boost you need to start your day and keep you full until lunch time!
Banana & Peanut Butter Ice Cream

4 Bananas
1/4 cup of Vita Coco Alternative Milk
2 tbsp Crunchy Peanut Butter
1 tsp Vanilla Extract
Cut the bananas into slices and freeze before blitzing in the blender with the rest of the ingredients.
Freeze for approx 2 hours.

Serve on warm toasted waffles!

Super easy and fool proof way to make great, nutritious and tasty ice cream without all the calories and dairy!
