Being a busy single mum means that when it comes to mealtimes I need something that is quick and easy. Something I know the girls will eat and food that is healthy and nutritious at the same time. I love creating new recipes and mixing up foods where I know I can sneak in extra veggies, making the meal appealing to little eyes and mouths too.
I love shopping local and think it is great to be able to find so many well known names available without having to head into town. I was able to buy Birds Eye Crispy Chicken in our local Costcutter which meant I could create one of the girls favourite meals.

We love fajitas but sometimes the girls find the mixes that come with those pre boxed varieties a little too spicy, which is why I decided to create our own version. Needless to say we skip the boxed versions now and just grab the bits to make our own dish, the crispy coating on the chicken means that there is no need for additional sauces etc too.

To make our kid friendly fajitas you will need:
1 box of Birds Eye Crispy Chicken
1 pack of Tortilla Wraps
1 orange pepper
1 red pepper
Handful of baby tomatoes
200g cheese
Salsa (optional)
Method:
Cook the Birds Eye Crispy Chicken or Southern Fried Chicken according to the pack instructions.
While they are cooking prep the veggies, slice the peppers finely and chop up the tomatoes.
Grate the cheese (or even easier buy the ready grated!)
Once the chicken is cooked, slice into bite size pieces and pop to one side. Now the fun begins and you simply pack your tortilla with your favourite fillings!
The girls always go overboard on the cheese and I opt for salsa on mine, the great thing is you can use as much or as little as you like making a quick, healthy and exciting meal for the whole family.
