I have long wanted to start up with my recipes again and joining forces with This Mama for the #reciperoundup each week has given me the kick I needed!
This week I will start off with something super easy but super tasty – Roasted red pepper hummus. A few simple ingredients but combined together makes a delicious snack to enjoy as a starter with toast or bread sticks, or eaten on its own with lots of crusty bread and crisps!
Ingredients:
Half a jar of roasted red peppers (drained and dried)
1 can chickpeas (drained and rinsed)
60ml tahini
1 lemon (juiced)
2 cloves of garlic
2 tbsp olive oil
Method:
Pop the chickpeas, garlic, lemon juice, oil and tahini into a food processor (I love my magic bullet for smaller jobs like this!) Blitz until creamy.
Add the bell peppers and pulse until fully blended, smoothing down from the sides if necessary to fully mix.
Dish up and serve with a drizzle of oil or chopped red peppers.
Simples! And so much better than any store bought hummus you will try. Adapt to taste with the garlic and if needed add a dash of Tabasco or chilli flakes for a kick!
