200g sugar
80ml water
0.8g cream of tartar
2 egg whites
5ml vanilla extract
More fruit to decorate

For this recipe i took inspiration from I Am Baker and created this rainbow cake. You are making the sponge though not using packet (you can if you prefer but i enjoyed the whole process iykwim)I wish i had added more food colouring as its for the kids. I suppose if you’re making this for adults etc its the flavours that count the most in which case its perfect.
Preheat oven to 180 degrees c.
Add all of the ingredients together and blend until smooth.
Puree your fruit and pop to one side….
Grease and line 4 6inch tins and split your cake mixture in to 4 bowls.
Add your pureed fruit to each dish.
Mix well….
Now its up to you if you are wanting to add food colouring – mine look quite bright but once they are cooked remember some of the colour goes MIA!
Pour the mixes into your lined tins and pop in the oven for approx 20 minutes. The strawberry one took almost twice as long as the fruit made it a lot softer.
Remove from oven and leave to cool in the tins before turning out and cooling completely.
Make up your frosting as per the frosting recipe i have used before – HERE. Sandwich the layers together and cover completely with the frosting.
Decorate with fruit, chocolate chips etc. I will post pictures of the inside etc once the boys are in from school. *Jake just asked why the picture looks like it has grass around the bottom. It’s not, its the pattern on the plate!!*
