There is a definite shift in the air this week and with it comes the need for comfort food, the need for thick woolly tights, oversize jumpers and marshmallow topped hot chocolate!
I have been making use of my oven and trying to get to grips with baking in a new Rangemaster, my first foray into the realm of comfort food this year is this super easy chocolate and banana loaf with toffee drizzle (it would be even more decadent with a dollop of clotted cream too!)
Ingredients:
110g Caster Sugar
110g Butter
2 Large eggs
170g Self Raising Flour
1tsp Baking powder
1tsp Vanilla extract
2 Large ripe bananas
100g Dark chocolate chips
Toffee sauce
Method:
Pre heat oven to 180 degrees C.
Cream together the butter and sugar. Add the beaten eggs, vanilla, flour and baking powder and mix until combined.
Fold in the bananas and chocolate chips and pour into a greased 2lb loaf tin.
Bake for 35/40 minutes or until golden brown and a skewer comes out clean.
Drizzle with toffee sauce and serve.
